Vegetable oil1 tbsp
Garlic(optional, finely grated)½
Dill(chopped)1 handful
Parsley(to taste)
Salt(to taste)
Instructions
Preparation
1
In a bowl, combine the Greek yogurt, lemon juice, and olive oil.
2
Add the finely grated garlic (if using).
3
Add the chopped dill or parsley (or a mix of both).
4
Season with salt to taste and mix well.
5
Let the sauce rest for 10–15 minutes to allow the flavors to meld.
Serving
1
Serve alongside cod or any white fish cooked sous vide.
2
Also pairs wonderfully with vegetables — cucumbers, tomatoes, or roasted potatoes.
Greek Yogurt
Use Greek yogurt specifically — it is thick and won't separate. Regular yogurt will be too thin.
A fat content of 5–10% provides the optimal balance between flavor and lightness.
Herbs
Dill is a classic pairing with fish and adds a fresh aroma.
Parsley is more neutral and works well for an all-purpose sauce.
You can combine dill, parsley, and a little mint for a Greek-inspired flavor.
Storage
The sauce can be made ahead and stored in the refrigerator for up to 3 days.
Before serving, let it sit for 5–10 minutes at room temperature.
Variations
Add finely diced cucumber to make a tzatziki-style sauce.
Add a pinch of ground cumin for a Middle Eastern twist.
Replace lemon with lime for a brighter, more pronounced acidity.
