Whey Crêpes

Tender and not at all sour — simple whey crêpes that work the first time.

Ingredients

Whey(warm is better, ~35–40°C)500 ml
Eggs2 pcs
Sugar(to taste)2–3
Salt0.5 tsp
Wheat flour(1.5–1.7 cups)220–250
Baking soda0.33 tsp
Vegetable oil(for the batter)2 tbsp
Vanilla(optional)
Whole milk(optional)25–30

Instructions

Warm the whey until it is lukewarm (~35–40°C).

Beat the eggs with the sugar and salt until dissolved. Pour in the whey and stir.

Add the sifted flour in stages and stir until smooth and lump-free. Add a little milk if needed.

Add the baking soda and stir for 10–15 seconds.

Add the oil and stir. Let the batter rest for 10–15 minutes — no longer, or it turns sour.

Cook in a well-heated pan until golden on both sides. Brush the finished crêpes with melted butter.
