Spinach Waffles
A vegetable base for any topping

Neutral in flavour with a dense texture — works under both savoury and sweet toppings. An excellent base for the freezer.
Ingredients

Eggs2 pcs
Spinach50 g
Wheat flour150 g
Vegetable oil60 ml
Water1 tbsp
Baking powder3 g
Salt2 pinch
Instructions
Batter

Blend the spinach with 1 tbsp. of water to a smooth purée.

Whisk together the eggs and oil.

Add the spinach purée and stir.

Add the flour, baking powder and salt, and mix to a smooth batter.
Cooking
Heat the waffle iron. Spoon in the batter and cook until lightly golden.
Freezing and reheating
Freeze for up to 2–3 months
Cool completely. Freeze in a single layer, then transfer to a bag, container or vacuum pack.
Reheating
Toaster, oven or air fryer — they come back crisp outside and soft inside.
