Spinach Buns

Tender, soft buns made with oat flour. A doughnut mould is the easiest thing to bake them in. Especially good with cod liver or cream cheese.

Ingredients

Spinach(fresh, or 120–140 g frozen)100 g
Eggs3 pcs
Oat flour150 g
Cottage cheese400 g
Baking powder1 tsp
Saltto taste

If you are using fresh spinach, rinse and dry it and add it straight to the blender. If frozen, thaw it completely and squeeze out the excess moisture so the batter does not come out too runny.

Put the spinach, eggs, cottage cheese, oat flour, baking powder and salt into a blender. Blend to an even, thick mixture.

Divide the mixture between moulds — silicone doughnut moulds work best. Bake in an oven preheated to 180°C for about 25 minutes.

Cool the buns briefly in the mould, then turn them out carefully and cool completely.
Freezing
Cool and freeze in portions
Keeps for up to 3 months
Thaw in the fridge or reheat in the microwave
