Savoury Syrniki with Herbs

Tender, unsweetened syrniki with dill, parsley and garlic. Ideal for breakfast or a snack. Very good with sour cream or lightly cured fish.

Ingredients

Cottage cheese(9%)200 g
Eggs1 yolk
Rice flour25 g
Garlic2 cloves
Dill(a small bunch)25 g
Saltto taste

Instructions

In a bowl, combine the cottage cheese, yolk, salt and 20 g of rice flour. Mix well.

Finely chop or press the garlic. Finely chop the herbs. Add the garlic and herbs to the cottage cheese mixture and mix well again.

Divide the mixture into portions. A glass makes shaping easy: put a portion onto a surface lightly dusted with rice flour, cover with the glass and move it in circles to form a neat round.

Fry the syrniki in a well-heated pan with a little oil for 2–3 minutes per side until golden. If you like, finish them over the lowest heat for another 1–2 minutes.
Freezing
Freeze them raw
Firm them up on a tray, then vacuum pack or put into a zip bag.
Keeps for up to 3 months
Cook them straight from frozen
No thawing needed.
