Fluffy Pancakes That Do Not Collapse

Two proven versions of thick pancakes — one on kefir and one on Greek yogurt. The first is denser and taller, the second softer and creamier.
Ingredients

Version 1: on kefir
Kefir(room temperature, 2.5–3.5%)200 ml
Eggs1 pcs
Sugar(about 2 tbsp.)25–30
Vanilla sugarto taste

Wheat flour170–190
Baking powder1 tsp
Baking soda0.25 tsp
Vegetable oilfor frying
Version 2: on Greek yogurt
Greek yogurt(2–5%, unsweetened)170 g
Whole milk50–70
Eggs1 pcs
Sugar25–30
Vanillato taste
Saltpinch
Wheat flour150–170
Baking powder1.5 tsp
Baking soda0.25 tsp
Lemon juice1 tsp
Instructions
Batter

In a bowl, mix the egg, sugar, salt and vanilla.

Add the kefir (or the yogurt with milk) and whisk together.

In a separate bowl, combine the flour, baking powder and baking soda.

Add the dry ingredients to the wet and stir only until they come together — there is no need to work the batter.

Leave the batter for 7–10 minutes. After that, avoid stirring it much, to keep the air in.
Cooking

Spoon the batter onto a well-heated but not scorching pan with a little oil.

Cook over slightly below medium heat for 2–3 minutes, covered.

When the underside is golden and small bubbles appear on top, flip carefully and cook for another 2–3 minutes.
How the two differ
On kefir
The tallest and most familiar version: the batter is dense but not rubbery. Just as fluffy the next day.
On yogurt
Slightly softer, creamier and less dense in structure.
Freezing
They freeze well
Cool completely, freeze in a single layer, then transfer to a bag.
