Cottage Cheese Palmier Cookies

Crisp, flaky cookies made from cottage cheese dough, with a caramelised sugar crust. Quick to make, and they freeze well once shaped.
Ingredients
Cottage cheese300 g
Butter(softened)150 g
Wheat flour(plus more for rolling)230 g
Baking powder0.5 tsp
Saltpinch
Sugar150 g
Vanilla sugarto taste
Instructions
Dough

Mash the cottage cheese with the softened butter using a fork until even.

Mix the flour, baking powder and salt.

Add the flour mixture to the cottage cheese in stages, working it into a soft, slightly sticky dough.

Refrigerate the dough for 20–30 minutes.
Shaping

Roll the chilled dough out thinly on a floured surface.

Cut out rounds using a glass.

Mix the regular and vanilla sugar.

Dip one side of a round into the sugar, fold it in half with the sugar inside, dip again and fold in half once more — you end up with a triangle.

Repeat with all the rounds.
Baking

Arrange the cookies sugar side up on a parchment-lined tray and press each one lightly.

Bake in an oven preheated to 180 °C for about 20 minutes until golden.
