Cottage Cheese Balls with Berries

Soft, tender balls of cottage cheese dough with a juicy berry filling inside. An excellent quick breakfast or dessert.
Ingredients
Dough
Cottage cheese300 g
Eggs1 pcs
Sugar25–35
Wheat flour100 g
Saltpinch
Vanillato taste
Filling
Blueberries(small, not too watery)to taste
Instructions

If the cottage cheese is wet, squeeze it lightly. If it is grainy, blend it to a more even texture.

In a bowl, combine the cottage cheese, egg, sugar, salt and vanilla. Mix.

Add the flour and work it into a soft dough. It should not be sticky, and it should hold its shape.

Divide the mixture into small portions. Flatten each one slightly and put the filling in the centre. Pinch the edges together carefully and roll into a ball.

If you are cooking them straight away, let the balls rest for 8–10 minutes and only then lower them into boiling salted water (it is important that it is not boiling hard). Cook for 2–3 minutes after they float. Lift them out carefully with a slotted spoon and serve immediately.
Important: do not stir straight away, and do not overcook them — the balls will fall apart.

Serve with sour cream, berry sauce, powdered sugar or melted butter.
Freezing
Firm them up first
Then put into a zip bag. Keeps for up to 3 months.
