Carrot Waffles on Oat Flour
Healthy, with no wheat flour

Soft waffles with carrot, cottage cheese and orange zest, made on oat flour.
Ingredients

Carrot(finely grated)150 g
Cottage cheese150 g
Eggs2 pcs
Oat flour60 g
Baking powder1 tsp
Orange zest1 tsp
Ground cinnamon0.5 tsp
Salt1 pinch
Sugar(optional)2 tbsp
Instructions
Batter

Finely grate the carrot.

Mash the cottage cheese with a fork, or blend it for a smoother texture.

Mix the eggs, cottage cheese, carrot, orange zest, cinnamon, salt and sugar (if using).

Add the oat flour and baking powder, and stir. Leave for 5 minutes so the flour absorbs the moisture.

The consistency should be like thick sour cream. If it is too runny, add 1–2 tbsp. of oat flour.
Cooking

Heat the waffle iron. Cook for 4–5 minutes until lightly golden.

Move to a rack and cool completely.
Freezing and reheating
Freeze for up to 2–3 months
Cool completely. Freeze in a single layer, then transfer to a bag, container or vacuum pack.
Reheating
Toaster, oven or air fryer — they come back crisp outside and soft inside.
