Apple Waffles with Crumble
Apples in the batter, crisp crumble on top

Grated apples through the batter plus a crisp coconut-oat crumble on top.

Batter
Eggs3 pcs
Whole milk360 ml
Butter(melted)150 g
Vanilla1.5 tsp
Wheat flour270 g
Baking powder1.5 tsp
Ground cinnamon0.75 tsp
Sugar35–40
Brown sugar35–40
Apples(grated and squeezed well)300 g
Crumble
Shredded coconut1.5 tbsp
Rolled oats20 g
Wheat flour20 g
Brown sugar35 g
Butter(cold)40 g
Instructions
Apples

Peel the apples if you like and coarsely grate them.

Add a pinch of salt and leave for 5 minutes. Squeeze well — the mixture should be moist but not runny.
Crumble

Mix the shredded coconut, oats, flour and sugar.

Add the cold butter in pieces and rub it in by hand to a crumb.

Toast in a dry pan for 8–10 minutes until golden, stirring. Cool.
Batter

Whisk the eggs, milk, melted (not hot!) butter and vanilla.

In a separate bowl, mix the flour, baking powder, cinnamon and both sugars. Pour the wet mixture into the dry and fold with a spatula — lumps are fine, do not overmix.

Add the apples and fold gently. Leave the batter for 5–10 minutes — the flour absorbs the moisture and the texture becomes perfect.
Cooking

Heat the waffle iron. Spoon in the batter — not too much. Cook for 5–6 minutes until golden, and do not open it early.

Move the finished waffles to a rack; do not stack them or they will go soft.
To serve
Scatter with the crumble. Add yogurt, sour cream or ice cream.
Freezing and reheating
Freeze for up to 2–3 months
Cool completely. Freeze in a single layer, then transfer to a bag, container or vacuum pack.
Reheating
Toaster, oven or air fryer — they come back crisp outside and soft inside.
