Omelette with Sausage Flowers and Spinach

The sausage is scored in close strips on a skewer and curled into a ring — a flower with a yolk sitting in the middle. The white with spinach is poured around it.

Thread a sausage onto a wooden skewer and score it in close strips down to the skewer along its whole length.

Slide it off and curl it into a ring, pinning the ends with a toothpick — that is the flower.

Put the flowers in the basket on baking paper.

Separate the yolks from the whites. Drop a yolk into the middle of each flower.

Beat the whites with a fork with salt and pepper, scatter the spinach leaves around and pour the white over.

Cook at 180 °C (356 °F) for 12 minutes — the white sets and the yolks stay bright.
