Chicken Roulades with Garlic Butter

The pounded fillet is rolled around a piece of butter with garlic and herbs. Cut one open and the butter runs onto the plate — serve with mashed potato.

Chicken breast(pounded thin)3 pcs
Butter(soft)100 g
Garlic(finely chopped)3 cloves
Dill(finely chopped)20 g
Paprika1 tsp
Salt1 tsp
Pepper blend0.5 tsp
Potato(for the mash)600 g

Mix the soft butter with the chopped garlic and dill, wrap it in parchment and freeze for 20 minutes.

Pound the fillets thin and season with salt and pepper.

Lay a baton of the set garlic butter on the edge of each and roll up tightly, tucking in the ends.

Put the roulades seam side down in the basket and dust with paprika.

Cook at 180 °C (356 °F) for 20 minutes.

Serve with mashed potato, spooning over the garlic butter that has run out.
Tip
The butter must be cold
A frozen baton will not melt as you roll and will not leak before it bakes.
