Bone-In Pork Chops with Mustard Sauce

The loin is cut into thick chops on the bone and rubbed with spices and oil. Served on a bed of rocket with chickpeas and a mayonnaise and grainy mustard sauce.

Chops

Bone-in pork loin(250 g each)3 chops
Olive oil2 tbsp
Paprika1 tsp
Salt1 tsp
Pepper blend1 tsp

To serve

Arugula80 g
Chickpeas(canned)200 g
Mayonnaise4 tbsp
Grainy mustard1 tbsp

Instructions

Cut the loin into chops about 2 cm thick, each with its bone.

Season with salt, pepper and paprika on both sides.

Brush with olive oil and rub the spices in by hand.

Cook at 190 °C (374 °F) for 20 minutes, turning halfway.

Mix the mayonnaise with the grainy mustard into a smooth sauce.

Put the rocket on the plate, set the chop on top, spoon over the sauce and scatter the chickpeas.
