Baked Potato Skins with Bacon and Cheese

The potatoes roast whole, then the flesh is scooped out, mixed with fried bacon and cheese and put back in the skins. Cheese and half a cherry tomato go on top.

Ingredients

Potato(large, unpeeled)4 pcs
Bacon(cut into strips)200 g
Cheese(grated)200 g
Butter30 g
Cherry tomatoes8 pcs
Salt1 tsp
Pepper blend0.5 tsp

Instructions

Scrub the potatoes, prick them with a fork and put them in the basket whole.

Cook at 200 °C (392 °F) for 35 minutes — until soft in the middle.

Crisp the bacon strips in the basket or in a pan.

Halve the potatoes and scoop out the flesh with a spoon, leaving the walls.

Mash the flesh with the butter, bacon and half the cheese, seasoning with salt and pepper.

Fill the skins with the mixture, cover with the rest of the cheese and set half a cherry tomato on each.

Return to the basket and cook at 180 °C (356 °F) for 10 minutes — until golden.
